Watermelon and Prosciutto with Mint and Toasted Almonds Recipe

How to make Watermelon and Prosciutto with Mint and Toasted Almonds

Method

  1. Preheat oven 200°C (or 180°C fan-forced).
  2. Place slivered almonds onto a flat baking tray. Toast for 5 minutes in the oven, take out and shake tray. Further cook for 2-3 minutes until golden. Let cool.
  3. Cut off outer shell of watermelon then cut into 2cm cubes. Place into a large bowl.
  4. Peel away prosciutto slices, cut each in half and add to bowl of watermelon.
  5. Break off mint leaves and add to the bowl.
  6. Add most of the toasted almonds to the bowl, leaving some for garnish.
  7. To make the dressing: In a separate small bowl, add sugar, lime juice and zest from lime and apple cider vinegar, then whisk in oil to emulsify.
  8. Pour over salad and serve.
