Watermelon and Prosciutto with Mint and Toasted Almonds Recipe
How to make Watermelon and Prosciutto with Mint and Toasted Almonds
Method
- Preheat oven 200°C (or 180°C fan-forced).
- Place slivered almonds onto a flat baking tray. Toast for 5 minutes in the oven, take out and shake tray. Further cook for 2-3 minutes until golden. Let cool.
- Cut off outer shell of watermelon then cut into 2cm cubes. Place into a large bowl.
- Peel away prosciutto slices, cut each in half and add to bowl of watermelon.
- Break off mint leaves and add to the bowl.
- Add most of the toasted almonds to the bowl, leaving some for garnish.
- To make the dressing: In a separate small bowl, add sugar, lime juice and zest from lime and apple cider vinegar, then whisk in oil to emulsify.
- Pour over salad and serve.
