Winter Citrus Salad Recipe

How to make Winter Citrus Salad


  1. Wash and dry the fruit. Grate 2 teaspoons of zest from one of the oranges and place in a bowl.
  2. To make the dressing: cut the same orange in half and squeeze out 2 tablespoons of juice. Add the juice to the zest.
  3. Add the vinegar, oil, mustard and honey to the same bowl. Whisk together until emulsified and season with salt and black pepper.
  4. Using a sharp or serrated knife, cut the skin from the remaining oranges and the mandarins. (With the mandarins, it is easiest to slice them with the skin on and then cut the skin for each slice.)
  5. Thinly slice the red onion and avocado flesh.
  6. To assemble, place baby spinach and rocket blend on a serving platter. Top with the sliced orange, mandarin, avocado and red onion.
  7. Drizzle with the dressing and serve.
