How to make Asian Hot Smoked Salmon Oats

Method

  1. Place 2 teaspoons of vegetable oil into a small frying pan placed over a high heat. When the oil is very hot, add the shallots and ginger and cook for 30 seconds or until fragrant and wilted. Set aside.
  2. To prepare the savoury oats, place the stock and remaining oil into a small saucepan and bring to the boil. Add the oats and cook for 4 minutes, stirring regularly. Take off the heat and rest for 4 minutes, covered with a lid or foil.
  3. Place the oats into 2 bowls and top each with half of the salmon. Add the shallots and ginger and sprinkle with sesame seeds and chopped chilli.
  4. Drizzle with a dash of soy sauce and serve.

Tip: This is best prepared when you want to eat it, as the mixture loses its runny, yielding texture if left too long.

Optional: You could substitute the salmon with sliced or shredded, cooked chicken breast.
