Method

  1. Cut the avocados in half and remove stone. Scoop out flesh and add to a small bowl. Add lemon juice and mash roughly with a fork.
  2. Mash the peas with a fork and add to the avocado. Season with the paprika and some salt and pepper. Then drizzle over the olive oil and mix well.
  3. Poach the eggs to your liking. Toast the bread.
  4. Divide the avocado and peas between the slices of toast and top with a poached egg.
  5. Crumble the fetta cheese over the top, add cracked pepper and serve immediately.
