How to make Savoury Potato Pancakes


  1. Peel and grate the potatoes. Add to a large bowl.
  2. Peel and mince the garlic, then peel and finely chop the onion and add to bowl.
  3. Mix the potatoes, onion and garlic together with a large fork.
  4. Heat the milk until just boiling, then pour over the potato mixture. Mix well, then season with salt, pepper and oregano.
  5. In another bowl, whisk the egg and add sifted flour. Add wet ingredients to dry and bring together. Divide the mixture into 4.
  6. Heat a little oil in a frypan on medium-high heat. Add one portion to pan and flatten into a 20cm circle. Fry each side for 3-5 minutes.
  7. Keep warm while you cook the rest.

Tip: Serve with your favourite sauce or chutney, or enjoy as it is, lightly seasoned with salt and black pepper.
