Pan Fried Salmon Fillets with Dijon Mustard and Capers

Method

  1. Peel potatoes and cut in half, boil in salted water for 20-25 minutes until soft. Drain. Mash. Stir in half the butter and dijon mustard. Season with salt and pepper.
  2. Heat oil in a frying pan over medium-high heat. Add salmon and cook for 3-4 minutes on each side or until cooked to your liking. Remove from pan and place on plate. Cover lightly and let rest for 3 minutes.
  3. Cut the broccoli into florets and steam over boiling water for approximately 3-4 minutes, until just tender crisp.
  4. Add remaining butter to a frypan and melt. Add capers and cook for 30 seconds.
  5. Serve the salmon with dijon mash, caper butter sauce and broccoli.

Tip: Garnish with lemon wedges and chopped chives.
