How to Make Sweet & Spicy Chicken Drumsticks
Method
- Whisk all marinade ingredients together in a medium sized bowl.
- Coat drumsticks and lay out on a baking tray lined with grease proof paper.
- Coat pumpkin in 2 Tbsp. oil and cumin and place on a separate lined baking tray. Put both trays in a preheated 180°C (fan forced) oven. Remove pumpkin after 20 minutes or when it is soft. Leave Chicken in for another 15-18 minutes.
- While chicken and pumpkin are cooking, make up the packet of couscous as per the packet instructions and set aside to cool slightly. In a large bowl combine couscous, pumpkin, pine nuts, feta and oil, spinach and onion.
- Stir lime juice through couscous and season with salt and pepper before serving, topped with the warm chicken legs and a garnish of lime wedges.
